You have been Cordially Invited to Ask for Fern…

Try, if you can, to hark back to the 1920s and 1930s when Louise Brooks, Gloria Swanson, Coco Chanel, Zelda Sayre, and Josephine Baker were what Beyoncé is today. Think bias cut evening gowns in liquid satins and silks, tweed suits, flounces and frills and topped off by a cute beret or tilt hat. Consider the fact that a blind pig or speakeasy – an illicit liquor establishment – was in; this was after all, the Prohibition era when times were bad economically but Hollywood was on a roll. In my personal opinion, this was a period that led to a cementing of style and class that is still adored today by the likes of Lady Gaga and Tom Ford.

Times in the 1920s would have been bad, and they were; yet this particular speakeasy laying in wait mysteriously ensconced by a little flower shop on Mohamed Macan Mawatha is a brilliant reinvention that firmly belongs here in 2018. The brain child of Anika Fernando, the phrase – Ask for Fern – is a brilliant play on words and is a nod to her own surname. Garnering a string of academic achievements, she along with her brother Dimitry planned a bar that certainly is themed better than any other place I have been to in Colombo. The idea, I am told, lay marinating in Anika’s mind for 3-plus years before being carved intricately into reality – a reality that is found located on 32B Sir Mohammed Macan Markar Mawatha.

Let’s talk food: It is divine. Period. The menu is heavily representative of all things Asian; I’ve been told that the Pulled Beef Redang Bao, which is Indonesian style Beef Redang packed in a steamed Bao Bun with a serving of homemade Green Chilli Sambal, and the Mizo Glazed Salmon, which is Glazed Salmon with Coconut Foam complemented with Grilled Pumpkin and Garlic Green Beans, are firm favorites amongst patrons. This particular menu that is collated and curated by Chef Andri Jamil from Singapore is a definite hit and is sure to evolve as time progresses.

Scanning the menu, which sported style, font and calligraphy cues from the 1920s, I couldn’t help but visualize the name – Anna May Wong: that sultry Chinese American Hollywood star that Tinsel town adored – written in cursive hand in my brain. There’s plenty of choice here and the portions are ample; however, as Anika said: share plates is what they particularly promote. Maybe more conversation is desired among patrons here; this is a given since Ask for Fern is the talk of the town.

Food is good, but booze is better; Ask for Fern does not disappoint in this regard. An Acharu Cocktail sits marinating waiting to give you an alcoholic punch quite possibly one that’s as ferocious as having an argument with Johnny Torrio. Also opt for Where’s Wally Bastian? – A kaleidoscopic mix of Ceylon Arrack, King Coconut Water, Lime, Bitters and Sugarcane. Single Malt is cheaper than therapy one particular Facebook post on their page claims, and this I agree with. One could go on writing about the virtues of drinking the night away, but the experience is far better, don’t you agree?

If work is the meat of life then dessert is the pleasure so advises B. C. Forbes, and there is plenty of pleasurable experiences on the menu. After your gourmet adventure is done, I suggest that insidious craving for sugar is appeased by indulging in one of the best desserts that I have ever had – the Pandan Ondeh Ondeh with Palm Sugar Filling that is coated in Grated Coconut. Aside from all the positive reviews and the verbal accolades that have been gifted like a bouquet, this enterprise is something that should be admired for a completely different reason. That reason is the fact that something exceptional like this was dreamt up by a start-up-inspired individual who is as persistent as she is enterprising. More admirable, I would add, simply because she truly is the embodiment of this millennial generation – hardworking, inspirational, empowered, and meticulous when it comes to planning.

And so I shall conclude: Whether it is a night where (1.) caution should be flipped casually in the wind, or (2.) a romantic adventure needs a sense of initiation, or (3.) a casual arbitration among friends is the order of the day, or (4.) a simple night indulging in your favourite alcoholic vice is desired – I suggest you begin writing the pages of that particular experience at Colombo’s only speakeasy. Perhaps I tickled your curiosity; in which case, may I invite you to venture down that eerily lit path near the age-old Ramada Hotel, find that ochre-lit flower shop, and simply: Ask for Fern…

All Things Crustacean

Despite being a tropical island we unfortunately don’t get to enjoy the best seafood before it’s shipped off to other parts of the world. However, in recent times quite a few restaurants have popped up bringing with them a plethora of crustacean inspired dishes served in every possible way. Adding to this growing hype is Taj Samudra’s own “Crab Factory”.

Housed within an extension of Taj’s infamous Navaratna the Indian-inspired interiors spill out in to this restaurant that is only open for dinner at the moment. One has the option of sitting outdoors on the walkway overlooking the lawn and a glimpse of the Indian Ocean, or indoors in the dining area which can seat approximately 30 people. A lot of restaurants and cafes take no heed on the music playing in the background but we must make special note of the brilliant playlist of classics and soft new melodies that were quite nostalgic to listen to while we enjoyed a meal fit for a king.

 

Taj have super nice staff and they exude hospitality, but on a busy Saturday afternoon were a bit slow. Manjuka who served our table though was super polite and even apologized for the food taking a bit longer than expected. We also noticed how meticulous and careful he was when handling cutlery and crockery, and when serving guests.

 

The menu at Crab Factory is fairly simple with lots of different preparations of seafood from around the world. For its namesake we decided to try everything “crab”. For starters we chose the Mud Crab Cakes which were told are quite a favourite, however the first dish to arrive at your table is a portion of Crab Cutlets which come complimentary. As much as it was a nice gesture, it was also a great opener for the meal. The cutlets and the crab cakes both had similar fillings with lots of crab meat spiced just right with paprika and onions.

For mains one can choose from mud or lagoon crabs and also choose the size of the latter ranging from 500g to the extra-large 1kg+ ones. If you aren’t a crab fan, then Jumbo Prawns, Cuttlefish or Lobster are also an option. Once you have chosen your seafood, decided on the size of it based on your appetite, next is to pick your sauces. The choices are endless with Black Pepper Coconut, Sri Lankan style with Murunga leaves, Dutter Garlic, Singapore Chilli, Thai Red Curry, and Crab Makhani, Tandoori, Chettinaad, Kerala and Goa all featured on the menu. No matter what you choose, it is served with complimentary basket of freshly baked roast “paan” (bread), kiri hodhi (lightly-spiced coconut milk gravy) and pol sambol (coconut chutney). Seeing that it was traditionally Sri Lankan accompaniments, we decided to stick with the close to home preparation with the Murunga leaves.

 

Now the secret of the Murunga leaves is to cut the “heatiness” of the crabs but it also serves to bring a distinct aroma and flavour. The pol sambol is freshly ground in a hand-held mortar and pestle which Manjuka artfully executed and brought to our table. We also had a visit from Chef Jayalath who dropped by to make sure all was in order.

When eating crabs, an apron, crab cutters and lots of patience is a must. But in the end it’s all worth it when you savour the perfectly done crab meat. So taken up with the presentation, we actually asked if the crab shell could be taken home as a memento of a great meal and greater experience.

 

To cool off the amazing meal we had a Blue Dragon and Taj Beauty off the mocktails list and liked the tangy lemon flavour of the blue food colouring infused “dragon”. After feeling completely stuffed but satisfied with all that crab it was time for dessert. Still with hot chilli burns on our tongue we thought the best dessert would be a nice White Chocolate Mousse which didn’t disappoint. The mousse was the right consistency and wasn’t too sweet. Taj also takes hospitality a step further with offering free chocolates to everyone at the end of the meal.

 

Overall Crab Factory offers another unique experience like most of the Taj’s restaurants and is a welcome addition to Colombo’s ever-growing food scene.

The Butterfly in the Garden

As you drive down Flower Road, the latest addition to the elite street is hidden among a cluster of trees. As its name suggests “Le Papillon” or “The Butterfly” is a restaurant and boutique hotel that promises an experience of nature in the great city.

As you enter on the left hand side of the property is an outdoor bar. Although Le Papillon does not have its liquor license (yet!) you are allowed to bring your own and enjoy an evening with your friends and family. One of the first things that catches your eye is the excellent work done with the interior of the building. Low lighting and artefacts that are reminiscent of a bygone era in Sri Lanka adorn the hallway that leads to both the A/C and non A/C seating areas of the restaurant. Adjacent to that is a plush and comfy looking “library” and “lounge” where one can relax and unwind with a good book. You can either bring your own or choose from a collection of classic literature, architecture, biographies and many more.

We also had a quick glance at the rooms and suites and found them to be very plush and comfortable with all the amenities of a 5-star readily available. We particularly liked the massive four-poster beds in the suites and the tasteful interior decorating. However, since we were there to review the restaurant we chose to come back down and sit inside the air-conditioned seating area. There’s a lot of black used in the furniture and even the cutlery and crockery which makes for a perfect setting for date-night. The area seats approximately 20 and is open for breakfast, lunch and dinner.

Service though courteous is a bit slow and it took a while for the staff to get things going although we were the only guests for quite some time. Arun in particular though was attentive and suggested quite a few of the dishes we ordered. Our entrees were a Crab Dip and Orange and Thyme-spiced Chicken Wings. The Crab Dip was absolutely divine and came with 6 slices of light and crispy Garlic Bread which we loved. The Chicken Wings however was not to our liking as the orange used for marinating seemed to have gone sour and totally destroyed the taste of the chicken, thyme and other spices.

Being a rainy day, we were quite hungry and decided to order a soup and salad before our mains as well. The Spinach Salad with Orange and Dates again turned out to be a disappointment with the salad, though a large portion, being completely tasteless and with no dressing in sight. The Prawn and Spinach Soup though was definitely redeeming with a generous helping of prawn floating in the thick, creamy soup. Again served with Garlic Bread the warm soup was great for starting off the meal.

For our mains we ordered a Mushroom and Herb Quiche and a Caramelized Spicy Pork. The quiche was a nice portion of healthy mushrooms, a lot of cheese and herbs to make it smell and taste just right. The dish is not too spicy so if you prefer it that way, then simply ask for some Tabasco or Chilli Paste. Inspired by a Vietnamese recipe the Spicy Pork is actually not that spicy and is rather on the sweet side. This may be attributed to the fact that it is cooked in King Coconut water as well. The thick curry is served with a generous portion of Steamed Rice and a Green Salad on the side.

Le Papillon has quite the eclectic dessert menu as well and we chose the Chocolate and Salted Caramel Tart which turned out to be simply divine. The salted caramel would cut through the denseness of the dark chocolate in perfect harmony in every bite. Wanting to try more of the desserts we also ordered Waffles with Blueberries and Butterscotch. Beware as this is quite a large serving and if you’ve just gone through as much food as we had might end up not being able to finish this. The waffle itself was quite light and fluffy and the fresh blueberries mixed well with the flavor of butterscotch.

After finishing our hefty meal, we have to conclude that while the starters are great and the desserts greater, we won’t really go here for their mains.

Colombo’s constantly evolving café scene recently got a new lease of life with the opening of Café Sociale, a café cum working space that is also pet-friendly. Café Sociale marks the first of its kind in the modern metropolis and boasts a curated space and an eclectic menu. Conveniently located at 252A, Galle Road, Colombo 04 (opposite St.Paul’s Church), the café is open from 10am – 10pm daily.

 

Speaking at the opening of the café Managing Director Shiva Balachandran said, “Café Sociale is not just your typical café where you would walk in for a quick bite or a coffee to-go. Instead what we have created is a space for people to come and be innovators. We have tried to make the interiors as high-tech and comfortable as possible to allow people to think creatively. The menu at Café Sociale is a creative genius using plays on famous movie titles for everything you get on it. The short but interesting menu pays tribute to the likes of “Vanilla Sky”, “Top (Gun) Bun”, “Beverly Hills (Cop) Cod and Italian Job among many others. Reasonably priced at rates affordable enough for students and start-up businesses, the menu includes many favourites from around the world and have been selected by Consultant Chef Thushara Gunawardhana, who has over 14 years of experience in the hospitality industry in Australia and Sri Lanka. The kitchen at Café Sociale is also fitted in with world-class equipment like the Rational Self Cooking Center while the finest ingredients from across the world are used to prepare the unique dishes. Maintaining the best hygiene and food safety standards as per the guidelines set by the consultant chef, Café Social’s creative and dedicated culinary and management teams have created a space and menu that is truly a cut above the rest.

 

Café Sociale as its name suggests is a place for people to socialize. In keeping with the theme the café has also introduced innovative concepts such as the “Co-ffice” which is a space for 8 hot desking spaces available to customers on a first-come-first-served basis. At a nominal fee this “seat” also offers 8 hours of free Wi-Fi and Air-Conditioning.

“We believe that these spaces are the offices of tomorrow especially for young entrepreneurs who prefer to be their own bosses. Many young people with innovative start-ups have issues with a quiet space to further their business propositions and we want to be the solution to that problem”, Shiva added.

 

The café also houses a 12-seater boardroom aptly named “Co-laborate” which can be rented out for an out-of-office brain-storming session or a meeting of any kind. For more casual gatherings, Café Sociale also has an outside space where pets are welcome. This backyard can also be rented for private functions. With ample parking for more than 20 vehicles, the café also takes away that part of the hassle. This is also another unique factor which lacks in many of the cafes and eateries in Colombo.

Where Messy is Normal

 

Being a tropical island, Sri Lanka is blessed with an abundance of seafood. Yet, somehow the best of our saltwater and fresh water produce goes elsewhere and we’re left with having to pay exorbitant rates for a good catch. Even the dedicated seafood restaurants can be over-priced where most middle class folk can’t really afford. Regardless we love our seafood. From the Jaffna Crab Curry and the Negombo Lagoon Prawns to the traditional Southern “Ambul Thiyal”, seafood is an essential part of island life.

One of greatest things about seafood for us is that you need to really use your hands to get the best out of it. On the other hand this is one reason why many people avoid the crustaceans at buffet and fine dining establishments. We on the other hand have no reservations, and happened to find a casual dining restaurant that basically runs on the idea of “messy is normal”.

Tucked away down Bullers Lane in Colombo 7, Cajun on Wheels is actually a Singaporean based franchise. The idea is to recreate the famed Louisiana seafood truck experience. The Sri Lankan version is actually housed in a converted container with an option of also sitting under the stars in a backyard garden. The whole ambiance especially at night is very laid back and dreamy. One of the most welcoming sights is the giant smiley crab at the entrance which kinda gives you an indication of the atmosphere inside as well.

The smiles are commonplace with the staff whose bright red attire also adds to the chirpiness of the restaurant. They are also well versed with the entire menu and are more than happy to help you pick out what’s best. This is something a lot of places lack with the wait staff being clueless about their own wares. C.O.W scores big time on this point.

Keeping things simple, their drinks menu offers a choice of fresh juices at very reasonable prices. A rather tall glass of fresh juice is somewhere between 200-250 rupees depending on the fruit you choose but we felt the lime or passion fruit is just ideal with the seafood.

So here’s how you order at C.O.W. The first step is to pick from six different signature sauces. There’s Cajun Cheese, Herb & Butter, Cheesy Crab, Singapore Chilli Crab, Salted Egg Yolk and the traditional Sri Lankan Jaffna Curry Sauce. Once that choice is done, you pick your seafood from an array of sea bass, prawns, cuttle fish, crabs, lobster and mussels. For sides to go with the seafood, you can choose rice, cheesy fries, pasta, or the localized roast paan and pol sambol.

The first thing that comes to your table is not cutlery but a white plastic that gets put on the entire table. Then comes the plastic aprons and a series of tools that look like they came out of a mechanics tool box. And then comes the glorious, steaming hot buckets of seafood that gets dumped on directly to the table with all the sauces. We picked the Sailor’s Feast which is a sharing bucket for two packed with sea bass, prawns, cuttle fish and grilled corn. For this we had the Sambal Mayo and Chilli Tomato Concasse to dip in. To say the very least the food vanished before our eyes and before you could lick your fingers there came the Insane Shrimp Bucket with the Cheesy Sauce and the Reel Crabby Bucket with the Jaffna Curry Sauce. As if that wasn’t enough we also ordered a bucket of Flexing Mussels simply to try out the Famed Herb & Butter Sauce. Do not ask us to pick a favourite because we simply cannot! The sauces were all done perfectly and the seafood is fresh and light. The roast paan baked at the restaurant itself is perhaps the best accompaniment to soak in any of the gravies. Nothing is more satisfying than being “normal” and cracking open those crab shells and digging in to the succulent meat within. We will just leave it at that.

Once you are done with the monstrous meal, your table actually looks like a pretty mess (Refer the images) and you just sit there comprehending how you actually ate so much. Some people may think C.O.W is pricey but on the contrary we think the portions to share make it quite affordable. For the moment they do not do desserts and it’s not like anyone would have room left for much after that seafood feast!

Run Porky… Run…

Pork is a staple in our diet. If we don’t have it at least once a week in some form or the other, our guys tend to get quite “hangry” (anger that is fuelled by hunger!). So when we heard that there is a couple who have dedicated their lives to promoting all things pork, we were overjoyed.

 

Big Bad Wolf first started off as a pop-up at the street food festivals and was an immediate hit. They then went on to do deliveries but that too only on specific days of the week. About two months ago though, they decided to convert their front yard and car porch in to a seating area and opened up an actual restaurant. We paid them a visit on a lazy Saturday afternoon.

Located in between the Dialog and HNB buildings in Nawala junction, this little lane is a bit hard to find. (Don’t go by Google maps because it will lead you elsewhere!). However the owners Paul and Liz tell us they hope to have a mural done on their wall so that this will be the landmark for hungry fans. Once you do locate the place, there are two seating options to choose from. We are told the evenings are perfect for a catch-up with friends or family as the sun sets and the lights come on dimly illuminating the garden. Might even be ideal for an intimate date with a twist.

If you are expecting though to have fancy menus brought to your table by a waiter in uniform, wrong place to be. What you will find though is warm and welcoming greetings from the owners who themselves play multiple roles of waiter, chef and entertainers. Paul does much of the waiting tables while it is Liz who is the maestro in the kitchen. Either way it seems to work for them. Then there’s “Odie” who sits by the entrance to the kitchen watching your every move but not really too bothered to venture out. At first you may think he is the “wolf” of this fairytale but unfortunately Odie is allergic to pork and can only wolf down (no pun intended!) a bun or two while his mistress prepares those delicious meals.

 

The menu at Big Bad Wolf is a simple A4 sheet on a board that actually keeps changing periodically. This is mainly because the recipes keep evolving with feedback from regular customers. However there are a few favourites that have stood the test of time and we had to order a few. Of these we ordered the Pork and Bacon Burger and the Classic Ribs. From the newer additions we ordered a typical Burgher meal of Yellow Rice with Kalu Pol, Potatoes and Pickle.

The Pork and Bacon Burger is a ground pork patty and a substitution of Strips of Bacon instead of the Lettuce Leaf. With chunks of meat and a bun that is overflowing this is one messy meal. (Tip: Ask for lots of tissues when you order!). We thought a great addition to this would be a slice of pineapple which would just make it perfect. Even without though the burger is a fulfilling meal for the stomach and the soul.

 

Next came our plate of 6 rather large ribs. All the sauces used at BBW are homemade to ensure authenticity in the recipe. Served with basic coleslaw the ribs were not too tender where the meat just melts off the bone and neither was it too tough. It was just perfectly seasoned, perfectly done, ribs that were a simple pleasure to tuck in to. Again messy but totally worth it.

 

The rice dish was nothing too fancy but the Kalu Pol Pork was definitely a winner. It wasn’t spicy to the degree of burning your taste buds but wasn’t too bland either. To accompany our meals we ordered both a Naarang Juice and a Ginger Beer both homemade by a local supplier. The Ginger Beer worked best with all our food choices and we highly recommend it.

Once we had been total “pigs” about our meal, we had enough room to try one of the signature desserts and chose a Brownie Smore from a list of about five. To say the very least, we were not disappointed. The warm chocolatey brownie was further “gooeyfied” (if that’s a word!) by the marshmallows on top melted to perfection. Every bite was like a combination of chocolate heaven. The perfect end to a hearty meal.

 

BBW is not rocket science cooking. It is the simplicity of the place, the people and the food that we love so much. Since then we’ve placed delivery orders and have tried many of the burgers and wraps as well which live up to the “so much pork” persona. But we definitely recommend eating at the restaurant itself for the full scale of yumminess.

An Isle of Pleasure…

When it comes to artisanal ice cream, there are a few names that surely do take the scoop; yet none are as exotic as what Isle of Gelato offers. I was fortunate enough to land an interview with Suranjan Perera and Shalini Fernando at Caramel Pumpkin in Ward Place. This young entrepreneurial couple has been inspired by something that has made Italy famous – Gelato. With the whole influx of entrepreneurial thinking making inroads into people’s consciousness, it is refreshing to see two ambitious individuals who have a background in finance putting the method into the madness when it comes to creating a new brand.

But one of the biggest problems that entrepreneurs need to learn is that focusing just on the money is going to be a very short-term success story. It truly was refreshing to hear these guys speak so passionately about Isle of Gelato. With quality on their minds, and wearing their hearts on their sleeves, this was surely going to be a success story when you realize that what they have literally churned out is oozing with superlative quality. I guess a testament to this level of quality is when Peter Kuruvita himself collaborated with these enthusiastic founders to vouch for their hard-focused efforts.

One of the most redeeming factors when it comes to Isle of Gelato is the manic obsession with using fresh ingredients. One of the more adventurous flavours would be jackfruit or waraka; there is also turmeric and coconut milk making up a sorbet flavor option that is aptly called — golden milk sorbetto. This reminds me: gelato and sorbets are also on the menu, and, I assure you, none of them taste like what you think they taste like – they taste better. While Colombo’s discerning denizens have been hogging their way through cups of finely churned gelato, a huge following in Galle has also been enthralled with Isle of Gelato as well.

Marketing is only half the game when it comes to promoting the product; the real fact of the matter is that when it comes to business your product has to be star class. With so many players in the market, Isle of Gelato is being pitched at a premium standard as it rightly should; the effort expended when it comes to the level of sourcing good quality items plus the investment of over LKR 70 million in state-of-the-art machinery and freezers shows that this is some serious gelato. There is no artificial flavoring. Period.

The names of the various flavours themselves evoke a sense of desirability that even I, as a foodie, have not come across in all my travels across 14 nations. Every flavor is a must try, and it goes without saying that names like – Puttalam Sea Salt and Caramel, Island Coconut, Buffalo Lemon Curd, and Fior Di Latte – does provide you with a sense of longing that’s rather unbearable. Isle of Gelato has got an almost-Harry-Potterish-kinda thing going on with Shalini Fernando concocting a vast variety of flavours that are, on rare occasions, beautifully indulgent mistakes.

All things considered, Isle of Gelato has brought the best of Italy to Sri Lanka; and, frankly, in essence, dare I say it – these folks really do churn out some exceptional gelato straight from their quirky lab in Rajagiriya. This refreshing brand does also bring a few other things to the table: one, is that Sri Lankans truly do have the ability to produce something that is world-beating when it comes to quality, and we do have the natural resources to do so; two, the entrepreneurial spirit needs to be fostered and nurtured since initiatives like this where people do get to follow their dreams is something that the country does need, and in turn, so does the world.

This, I would think, is the most refreshing thing of all in the Isle of Gelato story.
